5 star fish all the way September 28, 2008 Justin Rimmer (Dangleberrywood, Berkshire) Hugh is ace. I already had a flick through his Meat and can honestly say the combination of the Meat and Fish in my library is superb. I regularly find myself getting out Hugh's Meat and rustling up something special - you expect great things from his Meat, but fish is another kettle altogether. His intimate relations with the fish really come to the fore - heads, tails, gutting, frying, stuffing - he really loves the fish. I have to say that I hadn't really been into fish until my partner suggested I tried her red snapper - one taste of that on my lips and I was hooked. Regardless of the fish, it's the way it's prepared and presented that makes the difference. I like to see the fish laid bare, on a plate for me to really get my juices flowing. I like the way he approaches the fish from all angles - he is a true natural. My particaular favourite is fish fingers, something my partner particularly likes. She is also partial to battered fish however I prefer take it from a more obscure angle, and this is where I really come into my own. I like the way Hugh describes each section of the fish and gives his own 'personal' view if how to attack each piece - a real scale of achievement and hats of to Hugh - he rally pulls it off with aplomb. One of my favourites is the old stuffing of the big one - a trout. Faced with a large trout what do you do - Hugh certainly knows. Take the head, pull it off and ram in the load then roast to perfection. Excellent. My partner and I are really into fish now and a lot of this is thanks to hugh, giving us new ideas of the variety of fish and the parts of the fish - I really have to admit to liking a fish head, whereas my partner prefers the lower end and tail. I dare to say I like taking the tail too, however not as much as my partner. I have to say that if we had a fish each, she is rather selfish as she would take my tail but not return the favour and give me head.
Sole trader July 29, 2008 Gaz Pacho (Ferniegair) Great book to accompany a great series. Hugh isn't the cleanest looking cook around but he's certainly one of the most enthusiastic. My favourite scenes from the series were where he was cooking 'spoots' for the two clam divers. A hot pan, flash fried spoots, a sprinkling of paprika and they were won over! I just wanted to wash Hugh's hair and give him a big pat on the head.
Encyclopaedia and cookbook in one May 22, 2008 Miss Cranky Book is mostly aimed at people passionate about fish and cooking it and contains lots of information about fish, fishing practises etc. I personally was only looking for simple healthy recipes but I am still very happy with it. Was slightly disappointed with the number of recipes, however I love the description of each type of fish with comments on how best to cook this particular fish. With other cookbooks, you only have a dozen recipes for half a dozen types of fish, and are stuck if you have got anything that does not fit the list. Here, each recipe has suggestions on what other types of fish to use. And of course they know what they are talking about, it is all simple and elegant.

This book contains everything you would ever need to know about seafood and a lot more. From how to open shell fish, how to fish for them, how to refrigerate/ freeze them. It is great as a reference book, but comes into its own as a cookbook. Hugh is a magnificent chef some of the food I have cooked tasted amazing. With such simple recipes/ ingredients this book is a winner. Buy it now. But make sure the fish is as fresh as possible and the fish is sustainabley caught Thank you.
Not just a cookery book February 14, 2008 A. S. Gilbert (Nottingham) I was impressed that this book goes much further than just fishy stories and recipes. It is a good read in its own right and the text would appeal to many people and not just those of us who want to make the most of the range of fish now on offer at the local fishmonger. It is very well written and easy to read and I found it really absorbing. Just one thing, if you are of a certain age and need reading glasses you will definitely need them for this book. The text in this weighty tome is a tad on the small size.
