"By Summer Cooking, I do not necessarily mean cold food; although cold dishes are always agreeable in summer, at most meals, however hot the weather, one hot dish is welcome, but it should be a light one, such as a very simply cooked sole, an omelette, a soup of the young vegetable which is in season - something fresh which provides at the same time a change, a new outlook...........
My object in writing this book has been to provide recipes for just such dishes ....." 'Summer Cooking is a wonderful selection of dishes - for table, buffet or picnic - that are light, easy to prepare and based on seasonal ingredients.
ED demonstrates how an imaginative use of herbs can enhance simple meals, whether egg, fish or meat.
The chapters on hors d'oeuvres, summer soups, vegetables, sauces and sweets are full of ideas for fresh, cool food for the warmer months.' 234 pages packed full of information and recipes, interspersed with the usual charming black and white illustrations one has grown to expect, and love, in all the ED books in PENGUIN Cookery Library paperback format.
A simple recipe for 'Poached Egg' to a more complex 'Lettuce and Egg Gratin'(complete with béchamel), is just a quick example of the range of recipes that ED brings to you in her delightful writing.
