I've been using one of these sharpeners for a couple of months. I did an initial blitz and sharpened all my old knives when I first got it. Since then, I've been resharpening the knives I use regularly every other time I use them (or when I remember!). I've found this device to be very effective! It quickly revives old dull blades and it keeps them sharp over time with minimal effort. The design is easy to use. I give each knife about 10 strokes through groove 1, and then 10 more through groove 2. That's all they need if done fairly regularly. It's important not to press down at all when sharpening - just let the weight of the blade hold it in the groove. It's also important to hold the blade at the right angle so it rubs against the two guide rollers (so you know it's working the blade at the right angle). If you follow these two simple rules, you can't go wrong. I've also successfully used groove 2 to restore an oldish serrated bread knife to its former glory. Overall, I'm very happy. I don't see the need to invest 100 in an electric sharpener since this works really well with minimal effort. If you don't want to learn how to use an old-school sharpening steel, this comes highly recommended.

I know this sharpener has mixed reviews but I have to say that I love it! I could not believe the difference it made to the edge of one of my oldest knives. I would argue now that it is sharper than the day I purchased it. Great product. Get one!

Chef's Choice make some grand claims for this sharpener, to which it fails to live up. The coarse side certainly does remove a lot of metal but does not seem to create a good edge. The fine side seems to have little influence at all. It is claimed to sharpen serrated blades but I would seriously disrecommend its use for this on most types of serrated blade. This is NOT how a serrated blade is meant to be sharpened. It would be OK for putting an edge on cheap, soft steel kitchen knives. I would not recommend it for high carbon hard steel blades, nor for an expensive knife as it is very easy to leave deep, ugly scratches on the blade if it is not held at precisely the right angle. Its construction feels horribly cheap and plasticky. Not worth more than a fiver, in my view.

I must say I was a little concerned about buying this after seeing the other reviews, so I did a lot more research on the 'net. Chef's Choice (Edgecraft) are by far the biggest supplier of knife sharpening equipment in the world, their products are available everywhere, I don't think they would have remained in business if their products didn't work.I used to sharpen all my knives with a specialist Lansky Sharpening system, which took ages. This gets all my kitchen knives razor sharp in seconds! Even old really blunt knives take 50 strokes in slot 1 and then another 20 in slot 2 to get them back into shape. I can only assume that the other reveiwer had a faulty one. Very very easy to use, ultra quick, ultra sharp - Highly recommended.

I ordered this item as I was fed up with trying to get a good edge on my wife's collection of knives using a medium quality sharpening steel. Possible, and good for shedding calories, but very time consuming. I think I could have accepted the rather lightweight and "plasticy" feel of the sharpener IF it had worked as described. But after twenty minutes or so on two different knives I had made very little - if any - progress towards obtaining a good sharp edge. I also made sure I was following the instructions to the letter - not too much weight - keep it running against the rollers - don't move to the second stage until you have got it reasonably sharp with the first stage etc. It may be that this tool will keep a good edge on a knife if the knife is sharp in the first place - but that really negates the reason for buying it. My advice? Don't waste your time and money!
