This is not compact but it does one heck of a job of sharpening knives. THere is not a lot more to be said or even needs to be said.

I have been sharpening knives using quality hand-sharpening mechanisms for years, but it is time-consuming, especially when you want to reset a damaged edge. Having read reviews of these sharpeners, I thought I would take a chance. Firstly the 2000 will take a blunt and damaged edge (not everyone takes good care of their knives) and regrind and hone it in less than a minute. Secondly it will put a fine edge on already OK knives in even less time. I have tried it on a range of kitchen knives and also on folding knives. These are high quality knives that cost a lot more than the sharpener - Benchmade and Henckels for example. I will still use the hand sharpeners for serrated edges and polishing an edge, but no more evenings spent resetting an edge! Highly recommended. This is definitely better than the cheaper models, it takes more care of the blades as the guides are washable - so no scratches.

Whilst i had heard good and bad reviews about other Chef's Choice electric sharpeners, i thought i would give one a go after a chef friend of mine recommended it. I must say, this product is exceptionally good. My reasoning behind my purchase was simple - if the lesser models, which i had heard good and bad reviews about, are 'that' great, why is there a model up from the rest? After all, a knife is either razor sharp - or it isn't. This product is superb and whilst its more expensive than other models, i would recommend it to any professional or connoisseur who depends on their quality knives being the very sharpest they can be. I use this product on my global knives and the performance is unreal.Other comments: Bearing in mind again can i cannot vouch for lesser models, this unit is relatively quiet, i had a conversation whilst using it. The ability to change the sharpening model (unique only to this product - worldwide) and even put the module in the dishwasher is a real bonus. The unit is also extremely quick. Definitely one of my best purchases for the kitchen ever (except my Global knives :)) and i would recommend it to anyone.
